  1. Heat oil in a pan.




  2. Add Panch Phoran, bay leaf, and curry leaves. Let them splutter.




  3. Add onions and green chilies and sauté until soft.




  4. Stir in bottle gourd, soaked chana dal, tomatoes, turmeric, coriander powder, pepper powder, and salt.




  5. Mix everything thoroughly.




  6. Add sufficient water and cover the pan.




  7. Cook until both the bottle gourd and chana dal become tender.




  8. Garnish with grated coconut and fresh coriander before serving.
